Ingredients
1 smoked sausage (14-16 oz), 2 onions, 1 large green pepper, 2 cups Instant Rice, 2 cans black beans
Cooking Instructions
Sausage and Peppers (10 minutes)
Peel 2 onions and cut into large 1 inch chunks.
Take the green pepper, cut in half, remove the seeds and the stem, and cut into 1/2 inch strips
Cut your sausage into 1/2 inch circles. Get large frying pan/skillet. Spray with cooking spray and turn heat on medium high. Drop sausages, peppers and onions into skillet and cook about 5-8 minutes. (Note: since your sausage is "fully cooked" you are just heating it up and combining the flavors of the sausage, onions and peppers)
Rice (10 minutes)
Pour 2 cups hot water into small pot and bring to a boil.
When boiling, pour 2 cups instant rice into pot and add salt and pepper for seasoning.
Place lid on pot and wait 5 minutes for rice to cook.
When rice is done you can combine rice with sausage and peppers or serve it on the side
Black Beans (2 minutes)
Pour 2 cans black beans into microwave-safe bowl and place in microwave for 2 minutes.
