Ingredients
1 lb chicken (thighs - boneless and skinless), 1 onion, 2 cups instant rice, 1 16oz bag frozen broccoli
Cooking Instructions
Chicken and Rice (15 minutes)
Peel 1 onion, and dice it. Set aside
Remove the chicken from the pack and sprinkle both sides with salt and pepper. Get large frying pan/skillet. Spray with cooking spray (make sure you give it a good spray) and turn heat on medium high.
Place chicken in pan and cook on one side for about 5 minutes. Start the rice now
Flip chicken over and add onions to skillet
Reduce heat to medium, put the lid on the skillet and continue cooking chicken and onions for another 5 minutes or so
Rice (10 minutes)
Pour 2 cups hot water into small pot and bring to a boil.
When boiling pour 2 cups instant rice into pot and add salt and pepper for seasoning.
Place lid on pot and wait 5 minutes for rice to cook.
After 5 minutes remove the lid from the rice and the chicken and add rice to chicken.
Add a 1/4 to a 1/2 cup of water and mix the chicken and rice together for about 2 - 3 minutes to combine the flavors and absorb the water you added.
Broccoli (10 minutes)
Since you are using frozen broccoli, just follow the instructions on the bag. Fresh broccoli is just as easy. Take a skillet, add a 1/2 cup of water and turn on high heat until the water boils. Add broccoli (salt and pepper to taste) to the skillet and cover so the broccoli will steam. In about 5 minutes you will have great steamed broccoli.
