Beef and Bean Burritos with Spanish Rice and Corn

The Basics: 

Cost: $6.75 Prep Time: 30 minutes

Ingredients

1 Can Refried Beans, ½ lb Ground Beef,1/2 onion, 4 large flour tortillas, 2 cups Instant Rice, 2 cans corn, ½ Jar Salsa, Hot Sauce

Cooking Instructions

Beef and Been Burritos (15 minutes)

Peel 1 onion, and dice it. Set aside

Remove the ground beef from the pack and sprinkle with salt and pepper. Get large frying pan/skillet. Spray with cooking spray and turn heat on medium high. Break up ground beef and cook about 5 minutes.

Drain fat from ground beef (if any) and then add onion and hot sauce to skillet.

Continue browning for 2 minutes

Open can of beans and put in microwave-safe bowl and microwave for 2:30 minutes

When done get 4 flour tortillas combine beans and beef into 4 burritos (if desired add grated cheese and lettuce to burritos)

Spanish Rice (10 minutes)

Pour 1 cup hot water and 1 cup salsa into small pot and bring to a boil.

When boiling pour 2 cups instant rice into pot and add salt and pepper and hot sauce for seasoning.

Place lid on pot and wait 5 minutes for rice to cook.

After 5 minutes fluff/stir with fork and season to taste (if needed)

Corn (2 minutes)

Pour 2 cans corn into microwave-safe bowl and place in microwave for 2 minutes.

½ lb Ground Beef or Ground Turkey $1.25

1/2 onion (10 onions in $3.00 3 lb bag) $0.15

1/2 pack tortillas (4 of 10) $.99

2 cans corn ($0.74ea) $1.48

½ Jar Salsa ($1.77 / 2) $0.84

Hot Sauce

2 cups Minute Rice (1/2 box at $2.09) $1.05

Total Cost $6.75 (add extra for lettuce and grated cheese for burritos if desired)
